Bake bake bake!!

While waiting for my job to start I’ve been taking the opportunity to bake all my cravings recently! Hehe!

I would actually like to blog about my Inga and Panty cosplay shoot but I’m too lazy to do so haha. So I’ll settle with my baking post cause I’m really pleased about the turn-out !

I recently tried a hand at making a honey castella cake.
It’s essentially a Japanese sponge cake which texture is like a butter cake. But this cake has NO butter!
I didn’t want to bake it at first because I didn’t have the wooden castella box to bake it in. But I found a recipe that uses a normal loaf pan. Since my loaf pan turned out too long, I used a disposable aluminum loaf pan from daiso!

It was still too long (>_>); But I had to make do.
The result was a very short castella cake!

I had trouble trying to drop the cake to get rid of the air bubbles, after dropping a few times and spreading the batter, I just gave up and dropped it a final time and left it in the oven haha.

Obviously, the ones in Japan tasted better haha.
I don’t think this recipe realllly works. I mean the taste wasn’t really there. Hmm. Maybe it was the lack of mirin or something.
But it still is a pass!

Some other recipes I’ve seen, bakers somehow gotten a layer of uncooked batter on the bottom of the cake! D:
For this recipe I had a thin 1mm of uncooked batter when I took the cake out. But after leaving it to cool, the uncooked batter disappeared :3  Thank goodness!

The other thing I baked was my ABSOLUTELY favourite cake.
Red velvet cake!!
The only red velvet cake in singapore probably worth eating is the one from black cafe? I can’t remember the name, it’s a cafe at TripleOne.
Everywhere else, the cake is always dry! Cedele’s the worst. Don’t ever order that!

Anyways I should have known by the measurements for the cream cheese, it would be a very filling cake. 500g!! That’s the same amount I use for a cheesecake DDDD8 *almost fainting* I stared at the recipe for VERY LONG. Trying to figure out if I should really use all 500g of cream cheese.. in the end I just followed it haha. I had to throw away some frosting because my cake was only 2 layers.

Actually my batter turned very purple instead of red. I used about 4 table spoons of red colouring. I reckon it wasn’t enough. The bottom of my cake turned brown instead of red. The brown parts were all dry! The red parts were moist and absolute heaven! Not sure why it turned brown though.. Hmm could it be because I didn’t stir in the vinegar and baking soda fast enough? Hmmm…

The amount of icing sugar for the frosting scared me also! I used less that 2.5 cups as I ran out of icing sugar… (T^T)

I’m actually quite proud of myself! My first layered cake and my first frosted cake!! (^_^)v

I baked the whole cake in one cake tin because… I only have one cake tin (>_>);; haha.

The recipe said to bake for 30mins and I thought the baker used one cake tin too ! (Judging from the blog post)
But after 25mins the cake was like jelly. Haha. So I carefully watched over it and it took 50mins to get to this.

And because it was taking way to long for it to cool on the rack, I decided to cut the cake.
Thankfully the kitchen has a short bread knife (not those realllllyyy long ones) and so I sat down to cut it.
Not after pacing around the whole apartment anxiously.
I didn’t want to screw up my layers!

^ It got screwed anyway haha BUT thankfully not THAT bad hehe.
I tried to use something to guide my knife, but it didnt really work well.
Anyways you can see how red the middle part is and its all brown on the outer parts :( How sad!

I wanted to slice off the top of the cake coz its all ugly, but I was too scared to ruin it further. Anyways it was all gonna be covered with frosting anyway. So who cares!

I bought a frosting spatula at NTUC while picking up ingredients for the cake :3

I sent this picture to my mum and she asked where I bought the cake at haha.

The frosting part was a nightmare maybe? haha. Unsure if the weather is hot or something but I had a feeling the frosting was like melting. Hahah. So even though I really wanted to eat a slice before anyone else (incase it was really bad) I decided to leave it in the fridge.

A few hours later, my mum came home and we could cut the cake!
After refrigeration, the frosting harden so it was stable and solid hurhur.
Not like the icecream-y mess it resembled before.

I ate a small slice and was super full after that. (@_@)
I think the cream cheese is too sour? Should have put more sugar.
But my mum and aunt said it’s too sweet… So uhhh I don’t know man haha.

It is totally delicious though! It was moist and everything! (except the brown parts haha)

I probably won’t bake this again unless it’s a special occasion or if it’s for a good friend haha!!
Reason being, the amount of sugar scares me haha! And it’s a huge cake! Who’s gonna finish this! Hahaha!

Unless I have this crazy craving for red velvet cake again, then I’ll bake this ! If not, ahhh too much sweets ! Haha!

Hoping to get more baking stuff soon so I can make another layer cake! I’m looking at Japanese strawberry shortcake and a banana loaf. Super duper want to bake a banana loaf soon because I’ve been craving it for months! Haha!

cooking & baking

Since I’m bored and have nothing to do, I’ve been cooking and baking lots!

Few weeks back, I made a Brownie for my mum and lil bro (=3=)
The recipe was from a cookbook we found in our apartment in Brisbane! Haha.
Kelly used to make them all the time and it was always delicious, so for the first time (I think?)
I made it on my own haha!

Bro ate up so many <3

I also bought this sandwich press!

It trimmed off the bread’s edges perfectly!
Good for people who hate the sides of bread~
I know I used to hate them, but I’ve learnt how to eat them coz it’s such a waste to throw the sides away!

Made french toast coz I had a sudden craving for smth for maple syrup! (But NOT pancakes coz I’ve been eating WAYYY too many of those haha)

The first time I ate this was when in Primary school!
1 slice would sell for 40cents each and they ONLY sold it after school recess hours.
This was because it was deemed unhealthy and my school was on a very strict regime to make sure it had the least amount of overweight students (.__.) So anything oily the hawkers would sell, would have to be sold after the usual recess hours. Even things like fried nuggets, french fires etc were not allowed to be sold!
Throngs of students would rush madly to the noodle store (weird right, but they usually sell the unhealthy stuff!) after school, and it would be a mad dash to get a snack before the bus ride home.
We had to be fast cause the drivers left at a certain time!
If you were in the morning stream, these were sold in the weeeee hours of the morning! So students get their oily snack before school~

One of the days I also made chocolate chip cookies, but failed to take any pictures of it ._.||

Most recently, I made bear-shaped pandan madeleines from raspherri cupcakes!

They all developed humps but it’s hard to see in this picture (@_@)

I think the green is VERY shocking.. I probably put too much pandan paste.
The taste was great though!
But I’m so sick of eating them haha. My lil bro hates any food in green so he shied away from these.

The trick for getting these babies out is to VERY generously grease the mould with butter!

I’m actually waiting for a chance to use my loaf pan to make a banana loaf, but I can’t find ground hazelnuts and I’m too lazy to grind them myself (X_x)

I’m also now considering to bake a red velvet cake, but I’m lacking the courage!

We’ll see! (:

Measure, mix, bake, eat, drink, relax.

disney food stuff!

cook & bake!

Baked macademia and white cho cookies today.
Failure = white chocolate.

(Though i spent more on the nuts)
I bought this New Zealand SMOOTH white chocolate coz i was on discount.
Should have gotten the nestle milky one!

Coz of the chocolate’s SMOOTHNESS my cookie did not have any crunch when you bite into it coz the chocolate went piakkkkk with it :( I like to chew on my choc chunks :( *sad* but it was not a bad recipe!

Decided to attempt many things over the next few weeks!

1. Carrot cake cupcakes
2. Vanilla cookies (always so lazy because i have to refrigerate it twice!)
3. Strawberry daifuku (only in singapore)
4. Egg tart
5. Some sort of fruit tart!
6. Strawberry sponge cake / jap shortcake
7. Fruit cake
8. More cookies!
1. Oyakudon!
2. Egg in a basket (tomorrow for sure!)
4. 蔥油蛋饼 Taiwanese egg pancake! (maybe dinner or something!)
5. Mango pudding (in singapore coz mango season is over in aussie!)
6. Sandwich rolls (must find jap cucumber ! rawrssss) [also i hope we have a picnic soon! haha :P]
7. Baked rice

I’m reallyyyy hungry and eager to cook and bake stuff to fill my stomach now hehhee~!
